Apparently I’ve survived the first 10 weeks of this 44 week program….and so this week is a fun-filled schedule of exam after exam after exam. Today was my sanitation and safety exam (easy enough) and tomorrow is my skills practical. We’ll be making beef consommee, roasted cornish game hen with pan gravy, glazed carrots (again), Chateau potatoes (again) and broccoli hollandaise (again) all by ourselves. I did a dry run on the weekend by cooking the menu for friends so I know it’s do-able. Thursday brings a written exam for our skills class, followed by a black box competition. Friday brings two more exams – Concepts (my cooking theory class) and Dimensions (our ‘industry’ class)….and then it’s over!!
And then….two delicious weeks of holiday time before starting Quarter 2. I’ll do my best to try to remember to take photos of our exam dishes and definitely of the black box. Stay tuned!!
