Working in the restaurant business, Monday is the new Friday. And so, today I came home for the ‘weekend’ to sunshine and a fresh peach mojito.
I have a bumper crop of mint growing on my patio, and a fruit crisper full of fresh BC peaches. No need for a recipe – with fresh fruit, cold ice, rum, club soda and organic mint, you can’t go wrong!
But just in case…
- 1 peach – peeled, cut into chunks
- couple tablespoons simple syrup**
- 2 shots white rum
- 4 -6 mint leaves
- club soda (1/3 can)
Blend peach and simple syrup in blender. In martini shaker, add mint leaves and rum. Use a muddler or end of a wooden spoon to squish the leaves up a bit (releases the mint oils). Add ice cubes and peach puree, shake until cold. Pour entire amount (including ice cubes and mint leaves) into glass. Top up glass with club soda. Add straw, garnish with mint leaf and enjoy!
**Simple syrup is a (simple!) sweetener made up of equal amounts of sugar + water by weight, brought to boil and then cooled. It is a bartender’s best friend and is guaranteed to make your fruity drinks sweet but not grainy like sugar does. Keep it in a jar in the fridge, it will last for ages.
