The last three weeks have been packed full of staff training, recipe design, menu tasting, recipe tweaking. Tasting, tasting and more tasting. And finally, prep for the opening parties. Yes, that is parties. Leave it to Glowal Group, known for their massive opening parties, to have Society host not just one, but TWO opening parties. The media arrive at 4pm tomorrow, followed by the VIP, and by 8pm the invited few of the general public. And on Friday, we do it all over again. It’s going to be nuts.
What have I been up to?
*1000 mini cupcakes (chocolate cupcake, marshmallow cream filling, ganache topping, vanilla buttercream loopy swirl decor)
*1000 rocky road brownie bites (Italian chocolate cornmeal cake, pecan praline, homemade marshmallow, caramel)
*1000 white chocolate ganache filled zeppole mini doughnut holes, with pink creme anglaise
*1000 mini chocolate chip ice cream sandwiches
*1000 mini choux buns, for the prime rib burgers (coming from the hot side)
Today was my day off, spent wedding dress shopping with my sister. But, I did head to the restaurant for a few hours at night to take advantage of plentiful prep space and open ovens. Bring it on!
