So we’re back to school for the last (and best!) quarter. This term, no lecture classes. Only two kitchen classes, and my externship (which will be a separate post coming soon). This term I’m taking Advanced Patisserie and Chocolates/Confections.
For our Advanced Patisserie class, we started with the Wedding Cake portion of the class. We were to work in teams of two to design a cake – the cake itself is made of styrofoam, as they’ll now be on display in the school hallway for the next 6 months.

Make rolled fondant. This consists of icing sugar, shortening, granulated sugar, glycerine, glucose, gelatin, and water. It smells like plastic, and I plan to never eat it ever again. However, it is a dream to work with!

After adding icing sugar and mixing for a half hour (in an industrial sized mixer – don’t think a little Kitchenaid could handle this!!) we added a few drops of blue food colouring, then packed it into a garbage bag, sealed it airtight and left it in a bucket overnight. Rolled fondant must be made a day ahead. Here it is, ready to be rolled!

Now that we have made one, I want to make more! There are so many amazing ideas and ways to create beautiful cakes, and I want to learn as much as I can. Anyone need a cake anytime soon?
